This was meant for my dear friend visiting from Nova Scotia yesterday, but I learned rather quickly that phyllo has to thaw overnight in the fridge to work. Instead, we had roasted chicken and potatoes – both done with olive oil, lemon and oregano.
I’ve made this feta pie before, and as you can see it’s still in the oven. But I can vouch that this is delicious and it’s perfect for a girls night in.
To the photographers, and the non-photographers who appreciate decent pictures, I apologise for the one above. I’m feeling a bit tired from the day, and just want to hit the chesterfield and watch the rest of the hockey game. But there’s the recipe. Let me know if you want it, and I’ll type it up proper like.

Sounds yummy. I made something similar with rice and chickpeas – a Nigella Lawson recipe. I think anything would be good wrapped in filo and cooked in a springform pan!
That looks divine although the men in my house would be afraid of the contents. They would assume that it was baklava
